Tandoori Chicken Biryani


Its a very different kind of biryani and new to South Asians... Chicken cooked with tandoori masala then in a gravy of biryani masala and layered with rice... so my recipe in as follows:

For this recipe there are two but easy steps... it has more spices but not too hard to follow :) so 

Tandoori Chicken Masala:

Chicken 1 1/2 lbs (you can take any kind of cut with that - but Yes Tikka cut is preffered - but i used normal cut)
ginger paste 1 tsp
garlic paste 1 tsp
black salt 1 tsp
black pepper 1 tsp
salt 1/2 tsp (to taste)
raw papaya paste 3 tbsp or meat tenderizer 1 tsp
orange color few drops
lemon juice 6 tbsp
red pepper pd 1 tsp
coriander pd 1 tsp
cumin pd 1 tsp
nutmeg pd 1/4 tsp
yogurt 3-4 tbsp
oil 1/4 cup

Biryani masala

Rice 3 cups
ginger paste 1 tsp
garlic paste 1 tsp
dried plump (aloo bukharay) 8-10
black cumin 1 tsp
salt 3 tsp (to taste)
nutmeg pd 1/4 tsp
cardamon pd 1/4 tsp
cumin crushed (kuta zeera) 1 tsp
coriander seeds crushed (kuta dhaniya) 1 tsp
yogurt 3-4 tbsp
tomatoes large 2 coarsely chopped
onion fried 3 
biryani color

phewwww.... yes too many spices... now don't worry start following the easy pictorial method ... First take out ginger paste, garlic paste, black salt, black pepper, salt, red pepper pd, coriander pd, nutmeg pd, cumin pd, orange color

(here in the picture you can see the big black salt kind... that's actually a black salt masala I used to make it and keep in my house it has black pepper, cumin pd and black salt... so i used 3 tsp of that - i will soon tell you how to make that and have it with oranges or guava or with anything)



So add all above ingredients with chicken plus oil, raw papaya, yogurt and lemon juice and mix and leave it for 1 hour at least...

(if you want to skip raw papaya paste, you can.... coz its only chicken it will get tender otherwise...but if you add it will give you a soft tasty chicken)


Separately, take ginger paste, garlic paste, yogurt, black cumin, nutmeg pd, salt, red pepper pd, cardamon pd, crushed coriander seeds and cumin seeds (coarsely) 


Place that coriander and cumin seeds on a clean flat surface



Take rolling pin... roll hard on these seeds for 3-4 times



You will get this type of coriander and cumin seeds.
















Mix all ingredients well with yogurt...



Now, in a pot heat oil add the marinated chicken


Add the other mixture in it mix well... and cook till chicken get started heating...



Add chopped tomatoes and cook till tomatoes get tender



then add half of fried onion in gravy, and cook till oil comes up



Heat coal on stove, place a piece of foil on cooked chicken put the heated coal on that and spray/drop the oil over that piece of coal and cover immediately... don't let the smoke comes out..


Spread the boiled rice over that chicken pieces... sprinkle the fried onion pinch of cardamon pd and pinch of  nutmeg pd and orange color... smoke these rice as well with the coal..

Then simmer and cook it for 15-20 minutes (dum) ... Dish out and serve
