Pulao Biryani


Pulao Biryani is a combination of both techniques of making rice... light and yummy to have... you can use any kind of meat chicken, beef or mutton... today i used mutton.... all you need:

mutton 1 lb
rice 3 cups (750 gm)
red chili powder 1 tsp
coriander powder 1 tsp
salt 1 tsp + 3 tsp for rice
mace & nutmeg powder 1/2 tsp
cardamon powder 1/2 tsp
yogurt 1 cup
ginger 1 tbsp
garlic 1 tbsp
black cumin 1/2 tsp + 1 tsp for rice
black cardamon 1 + 1 for rice
ani-star (Badyaan) 1 tiny + 1 big size for rice
bay leaves 1 + 2 for rice
cinnamon stick 1 + 1 for rice 
cloves 4-5 + 4-5 for rice
pepper corn 3 -4 
white cumin seeds 1/2 tsp
onion 1 big sliced
fried onion 1 big sliced
tomato 1 big chopped 
orange food color 1/4 tsp
oil - 4 -6 tbsp (clarified butter/ghee is preferred)

In a mixing bowl marinate meat with some coriander powder, red chili powder, salt, half of ginger and garlic paste and yogurt 3-4 tbsp (use some out of those ingredients) ... nutmeg & mace powder and cardamon powder...


mix and leave it aside for 30 minutes


meanwhile boil water for rice... add black cumin, bay leaves, cloves, black cardamon, cinnamon stick, ani star and boil water... give it 3-4 boils ( you can use all these in muslin cloth pouch as well)


add soaked rice and salt... in boiling water... and cook till half done (2 kani)... strain them and keep them aside



Now make a masla... heat oil... add white cumin, black cumin, bay leaf, ani star, cinnamon stick and cook till you can start feeling the aroma


add sliced onion.. and cook till it start changing its color


add remaining half of ginger and garlic paste.. mix and add yogurt...

add remaining red chili powder, coriander powder and salt with some water... cook till oil comes up


add the marinated meat... mix well cook till it changes it color... add the chopped tomato... cook


if you are using chicken dont need to add water... for other meats add enough water to cook... cook till meat get tender and there would be around 1 cup gravy left

transfer that gravy in larger pot


add the cooked rice... sprinkle orange food color... and fried onion


dish out and serve with yogurt dip (raita)
