Tawa Chicken masala توا چکن recipe by morEwish



 
Chicken pieces coated in easy homemade chatpatti spice blend for a mouth watering dinner with a lot of flavour - Tawa Chicken recipe that can be baked, pan fried or grilled.







I am always looking for new and interesting seasoning and marinades that pack a ton of flavor to the chicken but are super easy to whisk together with ingredients you have on hand. And this is exactly that type of recipe. It helps keep the chicken so tender, juicy, delivers so much flavor, and you whisk the ingredients together in a flash.
To start off this Tawa chicken I made a spice blend with just some basic ingredients, by combining roasted and crushed cumin, corriander, chaat masala, crushed red pepper and garam masala. Added lots of green chilies for that kick. And added this spice blend in batches, so some get cooked up with chicken and some stays crunchy (khara khara).






I’ve only made this tawa chicken on stove top in a pan but I’m sure you can also make it on a grill pan, air fry them or you might be able to bake the chicken as well.
I've used leg quaters today, but you can use white meat or whole chicken in to pieces, or for a shortcut, you can make this with bonless chicken pieces as well.

Ingredients:


Chicken pieces 1 - 1 1/2 lb, (Bone-in preffered with slits)
Ginger 1 tablespoon
Garlic 1 tablespoon
Salt 1 teaspoon or taste
Green chilies 12 - 15
Cilantro 2 -3 tablespoon, chopped
Lemon juice 3 -4 tablespoon
Oil 1/2 cup

Spice blend aka Masala: 

Chat masala 1 tablespoon
Cumin 1 teaspoon, roasted and crushed
Coriander seeds 1 teaspoom, roasted and crushed
Crushed red chili flakes 1 teaspoon
Crushed black pepper 1 teaspoon
Qasoori meethi (dried fenugreek leaves) 1 teaspoon
Garam masala 1 teaspoon
