Panjiri | Nutritional sweet Desi Snack | Nutritional Supplement recipe by morEwish

An Indian or Pakistani traditional sweet snack usually serve as nutritional supplement. I made this for my friend who just delivered a baby with some DIY Onesie cupcakes and some goodies.

Ingredients:
Soojhi (semolina) 250 gm
sugar 200 gm or to taste
Butter/ghee 1/2 cup + for roasting other ingredients
almonds/ pistachio/ cashew nuts and more 1/2 to 3/4 cup each
1/2 cup herbal gum (gondh)
1 cup makhanay
1/2 cup mixed seeds (char maghaz)

Video Tutorial:

First heat pan, melt butter, add soojhi and cook (bhunno) till in turn light pinking brownish color, you start smelling aroma out of it.
Transfer into bowl and let it cool completely

Then in a same pan, fry nuts, transfer.

Then fry all other ingredients and transfer them and let them cool down completely

Then in serving bowl add all fried stuff stir well then add sugar, mix well; taste; and adjust.

Your panjiri is ready to eat.

Keep it in air tight container at room temperature
