Chicken Malai Boti (Creamy Chicken Bites)
Chicken Malai boti is a Bar-b-Que dish getting famous day by day in Pakistani/Indian market and its mostly available in all restaurants and now people are trying it home as well... they usually serve it with paratha (fired bread)... As the name suggest it has cream in it... so you get creamy texture and taste with different typical spices... so today I am sharing my creativity..and it goes like this:
Chicken Boneless cubes - 1 lb (i prefer leg n thigh part - you can use any part)
yogurt 1/2 cup
cream 1/2 cup (use any kind available easily)
salt - 1 tsp leveled (according to taste)
lemon juice - 4/5 tbsp
ginger & garlic paste 1 1/2 tbsp
cumin pd (zeera pd) - 1 1/2 tsp
fenugreek leaves (qasoori methi) - 2 tsp
freshly crushed black pepper 1 1/2 - 2 tsp
sugar 1 tsp
Oil/Ghee (clarified butter) - 1 tbsp
Take a bowl add chicken, yogurt and cream in it...
Then take all spices.. salt, black pepper, fenugreek leaves, sugar, cumin powder, ginger and garlic paste and lemon juice
When you are adding fenugreek leaves make sure you put it in your palm and rub in with other hand palm to make it get crushed kind of...
Add all spices and mix it with hand... I always suggest and prefer using hand for marination... because no tool can substitute hand
Cover and leave it for atleast half an hour or more...
Now, you have two options...
1. is bar-b-que in grill... place chicken pieces in skewers and Bar-b-que
and second is cook it in normal pan and then give it a smoke for bar-b-que flavor... So, that's what i did
Put all the marinated chicken in pot, switch on high flame and cook it uncovered... (don't cover it or else you will get a mince malai boti)
Cook it tell all water dries and you will left with thick gravy
now heat a piece of charcoal and put it on a small piece of foil ...spray/drop oil on that piece and cover the lid immediately... let the chicken get the bar-b-que flavor...
Give it 4-5 minutes... and Dish it out... and Serve it with paratha and Enjoy
