This fried rice is loaded with veggies and only takes 20 minutes to make! Vegetable Fried Rice has to be one of my family all time favorite dishes. I love making Chinese food at home and fried rice is always the perfect accompaniment to my takeout style dishes. Fried rice is one of those things that can be made from just about anything. All you need is some leftover rice and various mix-ins. If I am making it for a company I always pre-boil rice with salt and keep them in fridge before stir frying them, they won't break into bits while mixing.

Chicken:
1 large egg
2 Tbsp cornstarch
1 pinch each salt and pepper
1 lb boneless skinless chicken thighs
Oil for frying
Sauce:
2 Tbsp soy sauce
2 Tbsp water
1/2 Tbsp toasted sesame oil
1 1/2 Tbsp brown sugar
1 1/2 Tbsp rice vinegar
1 inch fresh ginger, grated
1 clove garlic, minced
2 Tbsp sesame seeds
1 Tbsp cornstarch
2 whole green onions (for garnishing)
Rice:
2 Cups boiled rice with salt
3/4 - 1 Cup mixed Veggies
4 eggs
1/2 Tsp salt
1/2 Tsp black pepper
1/2 Tsp sugar
2 Tbsp soy sauce
4 Tbsp oil
