There’s just something that’s so satisfying about a slice of rich, moist chocolate cake! But don’t let its simplicity fool you! This is a super moist, super chocolaty cake!
It makes a perfect chocolate party cake, but it’s easy enough to whip up on a weeknight. So, it’s perfect for whenever the cravings for chocolate cake strike. This cake is delicious on its own but even better topped with ganache.









This is basically Hershey’s chocolate cake which needs no introduction. And I am sharing with my wee spin on it, if you’re in for an even greater treat. All I’ve done is used buttermilk instead of regular milk and using melted butter while recipe calls for oil. You can also toss in some instant espresso powder to the batter . It amps up the flavor









Use room temperature ingredients: Eggs at room temperature (as opposed to cold from the fridge) are fluffier and will emulsify in the batter better, which will also help the cake rise properly. A trick for bringing eggs to room temperature quickly is to run hot water over them for one minute, or let them sit in a bowl of warm water for 5 minutes.

I learned early on to never skip the step of lining the bottom of my cake pans with parchment or wax paper. Then you never have to stress about the cake sticking to the bottom of the pan. I also spray the bottom of the paper and the sides of the pan with cooking spray, then flour it.

This cake is a little different than most cakes. For this cake, you’ll want a few fudgy crumbs still attached to the toothpick. 

I highly recommend greasing your cooling rack with a little nonstick cooking spray. Really moist cakes like this one can stick a little, and spritzing the cooling rack can help the cake lift right off.

Ingredients: 



2 cups granulated sugar
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 large eggs
1 cup buttermilk (1 tbsp vinegar mixed with 1 cup of milk)
1/2 cup (1 stick) butter 
2 teaspoons vanilla extract
1 cup boiling water

For the Chocolate Frosting

1/2 cup butter
2/3 cup unsweetened cocoa powder
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract


Ganache:


1 1/4 cups semisweet chocolate chips
3/4 tablespoon light corn syrup
3/4 cup heavy cream
