Instagram Reel:

Ingredients

For the Tandoori Chicken Patties

1 lb boneless chicken (preferably thighs for extra juiciness)

(You can use half thighs and half breast if preferred.)

1 slice bread

1 tablespoon mayonnaise

1 teaspoon The Spice Lane Tandoori Masala

½ teaspoon The Spice Lane Red Chili Powder

½ teaspoon black salt

½ teaspoon salt (or to taste)

For the Cilantro Herbed Mayo

½ cup mayonnaise

¼ cup fresh cilantro, finely chopped

1 tablespoon fresh lemon juice

1 teaspoon minced garlic

Salt to taste

For Assembling the Burgers

Burger buns

Cheese slices

Mayonnaise (for spreading)

Lettuce

Sliced tomatoes

Sliced onions

Sliced cucumbers

Instructions

Step 1: Prepare the Chicken Mixture

Add chicken, bread, mayonnaise, and all spices to a food processor.

Blend until well combined but not overly smooth. The mixture should be soft but hold its shape.

Step 2: Shape the Patties

Use a burger press for even patties.

Or wet your hands lightly and shape them manually.

You can freeze the patties at this stage. Lay them flat on a tray first, then transfer to freezer bags once solid.

Step 3: Cook the Patties

Cook using your preferred method:

  • Grill (4–5 minutes per side)
  • Grill pan indoors
  • Shallow fry in a lightly oiled pan

Cook until internal temperature reaches 165°F.

Step 4: Make the Cilantro Mayo

In a small bowl, mix mayonnaise, cilantro, lemon juice, garlic, and salt.

Refrigerate for at least 30 minutes to allow flavors to develop.

Assembly

Toast the burger buns lightly.

Spread a thin layer of mayonnaise on the both sides of the bun.

Add a cheese slice.

Place the warm tandoori chicken patty on top.

Spoon a generous amount of cilantro mayo over the patty.

Add lettuce and your choice of sliced tomatoes, onions, and cucumbers.

Cover with the top bun.

Serve hot with fries and ketchup.

About The Spice Lane

I’m currently collaborating with The Spice Lane, and one thing I genuinely appreciate about their spices is their quality commitment.

They state their spices are:

  • 100% natural
  • No preservatives
  • No artificial colors
  • No additives
  • Freshly ground in Illinois

When making something as simple as chicken burgers, good quality spice blends truly make the difference in flavor.

Tips & Tricks

Use chicken thighs for maximum juiciness.

Do not skip the mayo in the patties, it prevents dryness.

Wet your hands before shaping to prevent sticking.

Freeze patties flat on a tray first, then transfer to bags.

Patties can be cooked directly from frozen (just add a few extra minutes).

For younger kids, reduce red chili powder.

Toast buns lightly to prevent sogginess.

Make slider size patties for Iftar platters.

Final Thoughts

Ramadan meals don’t have to be complicated to feel special. Sometimes it’s the simple, comforting foods, made with care, that bring everyone to the table with excitement.

These Tandoori Chicken Burgers are hearty, flavorful, and practical. Perfect for busy evenings, growing kids, and those moments when you want something satisfying without spending hours in the kitchen.

May your Ramadan be filled with ease, barakah, and meals that nourish both body and soul, InshaAllah.

Date and Nut Bread ڈیٹ اورنٹ کی بریڈ recipe by morEwish

This quick bread is loaded with chopped dates and walnuts for a delicious combination. It’s a sweet, nutty and subtly chocolate-y and way good to enjoy for breakfast or at tea time.

When I did little reasearch, it appears that date and walnut breads have some origins in Scotland. And Grandma's back then would wash-out cans from let’s say green beans or corn or something and she would fill them half way and baked this bread in the actual cans. Which sounds retro and totally screams the 50’s. But today I am not baking bread in cans, I'am taking the ol’ loaf route.

For this recipe first soak dry dates in boiling water and baking soda, this will plump the dates and activate baking soda. You can wrap and freeze these loaves for impromptu coffee dates or impromptu hunger pangs. You could double the recipe, bake small loafs, wrap them in cute little packages and handout as gifts as well.
This bread is delicious for breakfast, smeared with butter or cream cheese- or just by itself. It's so good, you'll find yourself ready for another piece right away!

Homemade Apple Cider Donuts ایپل ساۂیڈر ڈونٹ recipe by morEwish

Perfectly spiced and beautifully tender, these Apple Cider Donuts are great fall snack. Full of warm cinnamon, freshly ground nutmeg, tangy apple cider, and with a heavenly chew, these donuts are delicious!

As I mentioned in my earlier post, apple cider and especially apple cider donuts are my family favourite treat for fall! Apple cider donuts are a must when we go for apple picking, but of course we cant go there often, so I thought to give a recipe a try. Though its little time consuming but they're easy enough for anyone to make at home.

This recipe doesn't involve any yeast. They are cake like donuts. While the dough is very simple to make, you can't fry it up right away. It needs an hour in the fridge of rest time. For best results, reduce the apple cider, boiling down the apple cider concentrates the flavor. Then Use a candy thermometer, it helps maintain the right temperature while frying donuts.

2 teaspoons baking powder
1 teaspoon kosher salt
1/2 teaspoon baking soda

How to make Soft Chapati Roti چپاتی روٹی and dough in Stand mixer by morEwish

On day to day basis I share my routine through Instagarm stories, whenever I share story making chapati roti, I got lot of request to share the tutorial. Today I am sharing how to make roti dough in stand mixer and tip and tricks along the way on how to make soft pillowy rotis!

Tips for Roti dough:

Don’t add all water at once. Keep adding water as needed, while mixing. The amount of water will vary depending on the brand of Atta. The more you knead the more softer the chapatis will be. When you press your finger against the dough, it should leave an impression. This is the right consistency of the dough.
Cover and let it rest for at least 15 to 30 mins. This helps gluten to release and the dough becomes more elastic. Dough should be soft.

If the dough gets too sticky, it means more water got added. Add a tablespoon of flour at a time and knead again till all the flour is absorbed.
If the dough gets too hard, it means less water was added. Add a tablespoon of water at a time and knead again. The dough should be soft enough that if you press your finger against the dough, it leaves an impression.

Tips to make soft roti

Knead the dough well, atleast for 5 minutes, it should be not too hard and not too soft/sticky.
Roll the dough with soft hands, applying equal pressure on all sides.
Apply ghee or oil to keep the rotis soft for longer.
If you are a beginner, you might need to use more dry atta. But always dust off any excess flour before cooking, otherwise the dry flour can make the roti dry and hard.
Making roti needs lots of practice. So be patient and keep practicing! Goal should be to make soft roti rather than worry about to make gol roti!

Homemade Biscuits بسکٹس recipe by morEwish

Homemade biscuits with golden tops and flaky layers make any meal feel special. This quick bread recipe allows you to mix, shape, and bake in a short amount of time. This works out well when preparing a feast for the family. However, there are a few techniques to be aware of before you get started.

These quick biscuits are perfect for breakfast, lunch or dinner and you have all the ingredients already in your kitchen. These are made totally from scratch and you don’t need anything fancy whatsoever. Start to finish they take about thirty minutes so it’s a fast recipe too. This recipe is made with all butter, no shortening!

  • The butter and milk for this recipe need to be as cold as possible for fluffy and soft biscuits. I freeze my butter before using it and recommend keeping the milk in the refrigerator right up until it’s time to add it to the dry ingredients.
  • Don’t overwork the dough! Keep in mind that you want your butter to stay as cold as possible when making these biscuits, and the more you have your hands on the dough the softer the butter will become. Definitely don’t use an electric mixer for this recipe.
  • Folding the dough over itself multiple times (5-6 times here) to encourage flaky layers in our biscuits. You can watch the video below to see exactly how this is done.
  • Don’t use a rolling pin, use your hands to gently work the dough into a flat rectangle before cutting out your biscuits.
  • Don’t be afraid to add flour to the dough if it’s too sticky while you are handling it (and make sure to work on a lightly floured surface).

Cheesy scones recipe by morEwish

Scones - they’re a little pastry that’s usually served for breakfast or brunch, but they make a really nice afternoon snack as well. In the UK, scones come in a circular shape, and they’re light and fluffy. They are basically the same thing as what Americans know as a “biscuit.”. Scones can be sweet and savoury, and today its savoury cheese scone recipe for tender, moist, buttery scones that are so quick and easy to make!

This savory scone is packed with cheese. It is delicious on its own or cut in half and spread with butter. . Sometimes I use this scone to make a Breakfast Biscuit. Just cut the scone in half and fill it with a fried egg. You can also add a slice of tomato, a slice of avocado, and/or some lettuce.

You could add some crumbed sausage, or cubes of cooked any processed meat. For the cheese, I have used grated parmesan and cheddar but you can use either one or gouda, or other hard cheeses can be used. Lastly, finely chopped green onion or chives can be used instead of parsley.
Buttermilk has a thick creamy texture with a rich tangy buttery taste that gives the scones a moist and bread-like texture. You can make a good substitute for buttermilk by stirring 1 tablespoon of vinegar into 1 cup of whole or reduced fat milk. Let stand at room temperature for about 10 minutes before using. Another option is to use buttermilk powder which can be found in some grocery stores or in specialty food stores.

They’re just slightly crisp on the outside, buttery on the inside and full of cheesy flavor. The slight warmth of the paprika makes them incredibly satisfying and the perfect side for soups or stews with milder flavors. I almost always pair them with classic chicken noodle and my Chicken Corn soup to round out the meal. They really take whatever dish you serve them with and level it up in a big way.

Warm cheese scones and cold butter – better even than the plain sort with clotted cream and jam, or do you have an even better recipe up your sleeve?
