Today I am sharing yet another recipe using potatoes. Aloo Gobi ki sabzi needs very few and basic ingredients, which is the need if this time.
Its classic Pakistani/Indian dish of potatoes and cauliflower. One pot, super simple, comforting dish that's ready in 30 minutes flat.
When done right, aloo gobi is straightforward to make but hard to forget: the potatoes and the cauliflower are slightly soft, with this beautiful spice crust. You can taste the inherent flavor of the vegetables, accented by acid and char. Aloo gobi is what makes home cooking so special. It’s the idea that with a short amount of time and a few spices, anyone can make a dish that tastes this complex.

Ingredients:
Potatoes 2 - 3 medium
Cauliflower 1 head
Black mustard seeds 1 tsp
Red whole button chilies 5-6
Cumin seeds 1 tsp
Salt 1 tsp (to taste)
Corriander powder 1 tsp
Turmeric powder 1/4 tsp
Oil 2-4 tbsp
Cilantro, chopped for garnishing
