Creamy Chicken Tikka Pizza Puffs چکن تکہ پیزا پیٹیز recipe by morEwish

 


I guess chicken tikka pizza is everyone's favourite and its a highest selling flavour among Pakistani's. I thought to create something with same flavour profile and add that to our oftar table! I created two different versions of it, Chicken tikka pizza puffs and Creamy chicken tikka pizza puffs - double the fun! 





Now you can serve them as iftar snack for as a after school snack, they are sure to be loved. You can customize them with your favorite flavors and watch everyone devour them in minutes! 
You can make these little puffs with wahtever pizza toppings you like! No matter what they are, they will fit into these little pizza pockets. For this version, I went super simple, classic and everyone's favourite chicken tikka chunks, pizza sauce, and cheese. Those are always a hit in our house, but you can add pretty much any of your favorites in this recipe. 








After my family devoured the pizza puffs and approved the recipe, I decided to add something more in there! So I made roux (mixture of butter and flour) and made a white sauce then follwed same recipe mix it with chicken tikka chunks, pizza sauce and cheese and ohh my! I am telling you it's absolutely delicious and sure to be a favorite in your home!

Ingredients:


Chicken Tikka:

Chicken boneless 1 lb, cut in very small chunks
Chicken tikka masala 2 tablespoon
Garlic 1/2 teaspoon
Ginger 1/2 teaspoon
Soy sauce 2 tablespoon
Vinegar 2 tablespoon

Pizza puffs:

Pizza saucee 2-3 tablespoon
Cheddar cheese 1/2 cup, shredded
Mozarella cheese 1/2 cup, shredded
Oregano 1 teaspoon
Vegetable of your own choice - bell pepper, jalepeno, mushrooms, onions, corn etc
Puff pastry sheets

Creamy Pizza Puffs:

Butter 2 tablespoon
Flour 2 tablespoon
Milk 1/2 cup
Pizza saucee 2-3 tablespoon
Cheddar cheese 1/2 cup, shredded
Mozarella cheese 1/2 cup, shredded
Oregano 1 teaspoon
Vegetable of your own choice - bell pepper, jalepeno, mushrooms, onions, corn etc
Puff pastry sheets

Cheesy Chicken Casserole with Ritz crackers چکن کسیرول recipe by morEwish

 



If you are craving something cheesy and satisfying, this Cheesy Chicken Casserole is what you need! Creamy and cheesy with a buttery crunch, it doesn’t get more comfort food delicious than this recipe.








This dish is all about comfort. It is taking simple shortcut ingredients and creating something warming that the whole family will love. This quick and easy make ahead dish is sure to make any weeknight or holiday gathering easier. For even more variations, experiment with adding your favorite veggies, substituting different cheeses, or swapping in low-fat sour cream to reduce the calorie load, this casserole is that forgiving!






This easy chicken casserole can be adapted to use whatever you might have in your fridge:

Vegetables: Cook and/or drain your veggies before adding to this casserole. Leftover grilled or roasted veggies, all work well.

Pasta: Any medium pasta will work in this recipe. Be sure to cook it al dente (so it’s still a bit firm), it’ll cook more in the oven.

Chicken: Swap it for grounded beef or any meat you have on hand.

Sauce: Use cream of whatever-you-have-in-your-pantry or make a homemade white sauce or condensed mushroom soup. 

Cheese: Any kind of cheese goes here!

Topping: Casseroles are usually topped with cheese. It’s also great with a bread crumb topping. Combine 1 cup bread crumbs with 1/4 - 1/2 cup melted butter (add a bit of garlic powder, salt & pepper too). Sprinkle overtop and bake as directed.






You can make this ahead, just assemble the ingredients to the point just before you would put it in the oven. Do not put the cracker crust on top. Cover it and it should be fine in the refrigerator overnight. And like most casserole recipes, you can freeze this as well. Simply allow it to cool down fully. Wrap it tightly with aluminum foil. It should be good in your freezer for about 3 months. Just take it out the night before to thaw in your fridge before you bake it!

8 oz egg noodles 
1 cup frozen corns
1 cup frozen peas
1/2 cup sour cream
1 cup milk
1 can, 10.5 oz, cream of mushroom soup
1 teaspoon salt - to taste
1 teaspoon crushed red chili
1 tablespoon dried parseley flakes
1 sleeve Ritz crackers, crushed
1/4 cup butter, melted

Pizza Samosa - you must have known and tried both of these separately, but did you ever have thought about it as one? Yes, you can relish the crispiness of samosa and cheesy taste of pizza at the same time. Bringing up a 2 most liked food - Pizza and Samosa under one recipe!











The actual process of making Samosas, especially ones where the pastry is made from scratch, can be tedious which often means people end up buying them instead of opting for homemade…..but that needn’t be the case! Using tortillas instead of making your own pastry is not only quick and convenient, it tastes gorgeous because the filling is homemade.








What beats a spicy samosa? Nothing!

Chicken Tikka Pizza 🧀 | Pizza Dough 🍕 recipe from scratch by morEwish




As you must have known its a National Pizza Month. So I thought to get in this trending train and make this Chicken Tikka Pizza! With the Pizza Dough recipe from scratch, which is a no fail recipe always turns out perfect!






Chicken Tikka Pizza is enjoyed by kids and adults alike! The cheesy Pizza with luscious Chicken Tikka bites, entices your taste buds. Crispy but soft, fluffy and airy Pizza crust, with spicy tikka
chunks, onions, jalapenos covered with extra cheese.. You can add fresh Cilantro as well to give it a distinctive Desi twist.






It is quite simple and requires only simple ingredients, especially this crust is so versatile, you can make thin crust, stuffed crust, and even deep dish with recipe they always comes our perfect!

Ingredients:

Pizza Crust:


3 cups all purpose flour
1 tsp salt
1 tsp sugar
1 tsp instant yeast
1-2 tbsp butter
luke warm water for kneading


Chicken Tikka filling and Pizza:


1 lb Boneless chicken
2 -3 tbsp Tikka masala
1 tbsp Lemon Juice

2 cups Cheddar cheese
2 cups Mozzarella cheese
1/2 cup pizza sauce

Three School Lunch ideas 🍱 by morEwish | Mini Pancakes | Chicken Ranch wraps | Pizza dippers





It was highly requested, we all get out of ideas when it comes to school lunches. So today I am sharing three lunch school ideas with some tips and tricks along the way!








First thing which I emphasise a lot is involve your kids. Teach them to look up for Ingredients label and Nutrition label, take them with you while shopping. Let them explore beautiful vegetables and fruits around.  May be if they are picking one of their favourite snack ask them to compare with its healthier version in the store. Trying new thing, may be one at a time is a key.







Right containers and lunch boxes is a key. Pick one which suits your kid food requirement according to their age. For me Dollar Tree have some amazing plastic one, just make sure they are BPA Free. Small container here from Dollar Tree are great for side of salsa or marinara sauce or may be little snacks or even they have travel safe salad dressing bottle, I use that for ketchup for my little one as well.






Planning ahead of time save you a lot of time and energy in morning. I make chicken using different recipes and keep them in freezer. This kind of chicken fillet are great for salads, sandwiches and perfect for office lunches. I often use Tandoori Chicken or chicken tikka masala or our all time favorite is Italian Grilled Chicken 






1. Breakfast for Lunch:
First idea I am sharing is serve breakfast for Lunch. I make mini pancakes using my fluffy Pancake recipe. Use mini chocolate chip in a batter and instead of quarter cup measure I used 1 tablespoon. Serves Belvita breakfast bites, drinkable yogurt. You can give them some blueberries and maple syrup on the side.







2. Chicken Ranch Wrap: 
Healthy grilled chicken and ranch wraps are loaded with chicken, cheese and ranch dressing. These tasty wraps comes together in just 10 to 15 minutes and makes a great lunch or snack.

Ingredients: 
2 cups cooked grilled chicken breasts chopped (seasoned with your favorite spices)
1/2 cup mozzarella cheese
1/4 cup cilantro minced (optional)
4 8 '' tortillas




If you’re in the mood for addins, go ahead and add some diced avocado, tomatoes, lettuce or whatever your little heart desires and enjoy these tasty wraps any time of the day!







3. Pizza Dippers
Last but not at all the least everyone's favourite Pizza -- This Pizza Dippers recipe is perfect! It’s a no-mess way for the kids to eat pizza and have fun dipping in the red marinara sauce. It is a great recipe to let your little helper join you in the kitchen. Win-Win!


Ingredients:
1/3 part of my Homemade Pizza Dough or 1 Roll of ready-to-bake pizza crust
2 - 3 tbsp pizza sauce (optional)
1/4 cup cooked chicken or pepperoni - Feel free to use any kind of meat!
8 Mozzarella Cheese Sticks
1 Small Jar of Marinara sauce
Butter, Garlic salt, Italian herbs

Bagel Pizza Recipe by morEwish



Pizza bagels are ultimate snack. They're easy, ready in minutes ... The recipe for pizza bagels is pretty darn simple and they’re great for when you don’t feel like messing with making your own dough or don’t feel like heating up your oven to seventy-billion° F.
They are 100% customizable so everyone gets to make their own little pizza bagel loading up on whatever toppings they want.





You can top the cheese with pretty much anything you’d put on a regular pizza…things like pepperoni, sausage, veggies..

Totally delicious, totally easy. This is kind of a non-recipe, but here are some directions that you can copy, paste, and print if you so desire, and you can substitute with hamburger buns or even french bread as well.

So feel free to get creative here I already shared my favorite way to prep these cute little pizzas.

Chicken Ranch Pizza by morEwish



I was looking for something different for the kids and came up with this pizza. Kids loved it and so did my husband. With Ranch dressing for the sauce, lots of cheese, grilled chicken and tomatoes, it’s a nice alternative to your usual pizza with red sauce. (Although, I love pizza with red sauce…but I’m always looking for more ways to have pizza!)





I’ve got to be honest, we make homemade pizzas together as a family almost every weekend…we love them that much! It’s always tricky choosing what type of pizza to make since we have soo many favorites!

And I get tired of the same old stuff, yet my family is too picky to try something “too new”. Recently I ran across this pizza recipe and I though sounded good, but I would “tweak” a little to our liking. With the combination of chicken, ranch and cheese on a pizza crust, I knew I couldn’t go wrong!

1 batch Prepared Pizza Dough
1/2 cup ranch dressing
1 lb Cooked Italian-style chicken
1/4 cup chopped onion or green onions (optional)
1 large tomato, seeded, chopped
1 cup shredded Cheddar cheese (4 oz) 
1 cup shredded mozzarella cheese (4 oz)

BBQ Chicken Pizza | Quick weeknight recipe by morEwish




Treat your family to this warm and delicious BBQ chicken pizza, homemade pizza crust topped with sweet BBQ sauce, chopped chicken, onions, cilantro, and tons of cheese.Its great and really different from your traditional pizza.




For this recipe, I used my regular Homemade pizza crust. Soft, fluffy perfection. It’s the recipe I make the most! Yep, it’s often pizza night in our house.

I usually use two cheeses on my BBQ chicken pizza: shredded mozzarella and smoked gouda. The smoked gouda was purely for flavor; it pairs wonderfully with the sweet BBQ sauce, If you don’t want to make the extra trip to the store, you may leave the gouda out completely and just use mozzarella.

The flavors and textures in this pizza are incredible! You have the sweet tang from the BBQ sauce, the meaty chicken, the zesty onion, fresh cilantro, crispy edges, and ultra cheesy mozzarella covering it all.

Ditch the delivery guy, you’re eating homemade tonight!

1/2 recipe homemade pizza crust
1/3 cup + 1 Tablespoons your favorite BBQ sauce
1/2 cup cooked, sliced chicken
2/3 cup shredded mozzarella cheese
2/3 cup shredded smoked gouda cheese (optional)
1/2 small onion, thinly sliced
fresh cilantro, for topping

Puff Pastry Tartlets by morEwish



These bite sized puff pastry tartlets can be made with leftover filling, taco filling, chicken and your leftover dinner, finish them off with your favorite toppings or let your guests or family members top their own!



As Ramadan are around the corner this recipe could be great addition for your iftar table this year,

2 tbsp. all-purpose flour
1 pkg. (17.3 ounces) Pepperidge Farm® Puff Pastry Sheets, thawed
1 lb. ground beef (or any leftover filling)
3 tbsp. shredded cheese mix (cheddar and mozzarella)
3 tbsp. shredded lettuce
1/4 cup diced tomato

Serving Suggestion: Diced avocado is also delicious as an additional topping for these little tartlets.

Chicken Fajita Pizza - Dough Recipe with Fajita topping




My no-fail pizza dough recipe, topped with fajita toppings - I shared this recipe for many times but this time I made for my kids spring break fun day outing -- Which we did at Family Fun Zone and did a review too Fun Day Review

Recipe:

For Dough..
3 cups all purpose flour
1 tsp salt
1 tsp sugar
1 tsp instant yeast
1-2 tbsp butter
water for kneading

Fajita topping..
1 lb boneless chicken cubes
1 tsp minced garlic
1 tsp salt
1 tsp red chili flakes
2 tbsp chili sauce
2 tbsp Worcestershire sauce
2 tbsp lemon juice/vinegar

toppings:
sliced mushrooms
sliced bell peppers
mix of cheddar and mozzarella
dried oregano - to sprinkle
red chili flakes - to sprinkle

Shepard's Pie


Shepherd's pie is a meat pie with a crust of mashed potatoes. In early cookery books, the dish was a means of using leftover roasted meat of any kind, and the pie dish was lined with mashed potato as well as having a mashed potato crust on top... and at the same time its a complete meal

Recipe Adapted from: Fauzias.Kitchen.Fun
500gm beef mince
750gm white potatoes (about 10-12 medium sized)
2 tsp ginger/garlic
3 medium sized grated or chopped onions
3 medium carrots, diced/cubed into small pieces
half cup green peas
4 tbsp sweet corn
salt to taste
mozarella or cheddar cheese, grated
3 tbsp tomato paste
4 tbsp butter (half for mince and half for potatoes)
2 tbsp oil
1/2 tsp cumin powder
1/2 tsp coriander powder
2 tbsp coriander leaves
1 chopped green chilli
1 tbsp white flour
2 tbsp milk

Mince Ingredients:


1/2 tsp turmeric powder
1 tsp lemon juice
1 tsp paprika powder (or chilli powder if you do not have paprika)
1 tsp cumin powder
2 tbsp of chopped coriander leaves
1 tsp salt
1 tsp pepper

Mix all mince ingredients together and set it aside.


Heat the oil and 2 tbsp. of butter in a pan. Add the onions and fry until translucent, then add your ginger and garlic. Fry together until they release their aroma



Then add the diced carrots and fry them for about 3 minutes... Now add the peas and fry them for another 3 minutes or so. Now add your mince and chopped green chilies and stir fry until the mince starts to brown and has a good color. Add the sweet corn followed by the tomato paste and sprinkle 1/2 tsp. cumin powder and 1/2 tsp coriander powder..Let this cook for about 5 minutes, then sprinkle the white flour so that it absorbs any extra moisture in the mixture.


Cook for a few more minutes until you find that the mixture has thickened nicely, then add your coriander leaves and switch off.

Peel and cube the potatoes, then boil them in some salted water until soft. Drain and add 2 tbsp. butter and 2 tbsp. milk, then mash them whilst they are hot. Adjust salt accordingly.


Take a pyrex or baking dish, butter it nicely and pour your mince mixture first. Flatten it and make sure the layer is even.
Then add your mashed potato on top. Be careful not to squish the mashed potatoes down, this will displace the mixture underneath and make the pie look untidy. Just try and gently place your mashed potatoes all over and you can use a fork to push and adjust it.

Now add your cheese of choice. I did a mozzarella and cheddar combination, but you can use whichever you like. You can also sprinkle some chopped coriander on top, but that too is optional. Some like to add dabs of butter on top of the pie, so if you like some extra buttery taste, go for it!


Bake the pie in a pre-heated oven at 180 C/350 F for 25-30 minutes or until it's nice and golden on top. Serve with some salad or even as it is... i served it with garlic bread... as I say complete meal... enjoy!

Chicken Tart recipe by morEwish

Tarts are perfect for appetizers, snacks, and even a main dish for a meal accompanied by a nice fresh salad. This Chicken Tart can be thrown together in just 15 minutes, or just in time for dinner!






A savory tart or a pie would always be delightful when you have them home made... its a crispy crust filled with yummy chicken with some veggies and yummy layer of cheese is cherry on top.






The pastry base for this dish is easy to prepare and make. You can make your own pastry crust for Tart but there are also a lot of shortcut pastry products available in the market if you want to cut your preparation time and have a pastry base readily available for cutting and baking. Preparation is just about thirty minutes and cooking time is thirty minutes as well, so within an hour you can already serve this yummy tarts with chicken for everyone to enjoy.




With a little garnishing, this tart can turn into party-worthy appetizers and finger food snacks.

Ingredients:


For dough:

all purpose flour 2 cups
butter 1/2 cup (125 gm)
salt 1/4 tsp
baking powder 2 tsp
milk 1/2 cup

For filling:

boneless chicken 1 lb
onion finely chopped 5 -6 tbsp
garlic mince 1 tsp
butter/oil 3 tbsp
salt 1/2 tsp
black pepper 1/2 tsp
flour 2 tbsp
cream 2 tbsp
milk 1 cup
bell pepper 1 medium (small chunks) 
cheese - blend of mozzarella n cheddar 
oregano - optional

To make the pastry: 

combine the flour, baking powder and salt in a large mixing bowl....add the butter and mix with a pastry blender or hands until the mixture resembles coarse crumbs
Make a well in the middle of the pastry... pour water and bind the dough until it holds together without being too wet or sticky



now for the tart.... generously grease 9 inch pie pan, roll out the pastry on a lightly floured surface into a 12-inch circle, about 1/4-inch thick



carefully roll the dough up onto the pin and lay it inside pie pan



press the dough into the pan so it fits tightly...press the edges into the sides of the pan...


shave off the excess hanging dough with a knife...


prick the bottom all over with the fork


now bake it for 15 - 20 minutes in preheated oven on 350F/180C...
