Meethi Dahi Phulki 🥛 | Fresco/Fefo Style recipe for Ramadan 🕌 by morEwish 👩‍🍳

Indulge in the classic flavors of Meethi Dahi Phulki, where soft, cotton-like gram flour dumplings are submerged in sweet, creamy yogurt. This recipe is a perfect addition to your Ramadan iftar table, where long queues form for tailay walay snacks, or as a delightful treat for your Eid trolley.

Versatile Delight


Whether served as an appetizer, iftar snack, or at picnic potlucks, Meethi Dahi Phulki always wins hearts. You can also transform the same recipe into a Mix Chaat by adding chutneys and boiled potatoes — a definite crowd-pleaser for your guests!




So traditionally these phulkian or dumplings are made of gram flour (baisan) but I add all purpose flour (maida)  as well, and add two leavening agents baking powder and baking soda.  Two of these additional ingredients makes phulkian soft, tender and melt in your mouth.

Ingredients:


For Phulkis (Dumplings):

Gram flour (Baisan) – 1 cup
All-purpose flour (Maida) – 1 cup
Baking powder – 1 tsp
Baking soda – 1 tsp
Salt – a pinch
Water – as needed to make a thick paste


For Yogurt Mixture:

Yogurt – ½ cup
Salt – a pinch
Sugar – 2-4 tbsp (adjust to taste)
Chaat masala – for sprinkling


Method

1. In a bowl, mix gram flour, all-purpose flour, baking powder, baking soda, and salt. Gradually add water to form a thick paste. Let it rest for 10-15 minutes.

2. Heat oil in a pan and fry small spoonfuls of the batter until golden brown. Drain on paper towels.

3. Soak the fried phulkis in warm water for 5-7 minutes. Gently squeeze out excess water.

4. Whisk yogurt with sugar and salt until smooth.

5. Add the soaked phulkis to the yogurt mixture. Let them absorb the flavors for at least 10-15 minutes before serving.

6. Sprinkle chaat masala on top and serve chilled.


Pro Tip 💡


For a chaat-style twist, top with imli chutney, green chutney, and boiled chickpeas.
