Dal Karhai دال کڑہاۂی recipe by morEwish





Daal Karhai, when I heard this name for the first time. I was in awe. My whole family love karhai gosht, made with any kind of meat but Daal Karahi sounds interesting.
Finding new legumes and lentils recipe is my all time task, so trying/recreating daal karhai was must.








I used Chana daal also known as bengal gram. These lentils have a sweet and nutty taste. The dal is cooked to al dente, then cooked further with the flavoring ingredients like tomato, garlic, ginger and spices almost like we cook karhai with meat. I used wok (karhai) to cook and to serve as well. But ofcource you can use regular cooking pot as well. Simple and delicious!










Serve chana dal with steamed rice or zeera rice and a side raita. You could also serve it with rotis or naan along with cucumber raita. This Chana daal is easy weeknight dinner, make family meal time simple: quick, fresh and delicious.

Ingredients:


Chana daal 1 1/2 cups
Tomatoes 3-4 medium size
Ginger 1 tbsp
Garlic 1 tsp
Salt 1 tsp (to taste)
Red chili powder 1/2 tsp
Black pepper powder 1/2 tsp
Coriander powder 1/2 tsp
Black cumin (kala zeera/shah zeera) 1/2 tsp
Fenugreek (qasoori methi) 1/4 - 1/2 tsp
Fried onion 2 tbsp (optional)
Oil 1/4 - 1/2 cup
Green chilies 8 -10
Cilantro 1/2 cup, chopped
Garam masala 1/2 tsp
Ginger 1 tbsp, Sliced

Urad Daal اوراد دال recipe by morEwish






Urad dal, also known as Split Black Gram, is one of the famous lentils used in southern part of Asia, especially in Indian cuisine. This is a very comforting dal for a cold day. Urad dal is stickier and heavier than other dals, so this is a thick-style dal. Rich in dietary fibre and protein, black gram when cooked is sticky and is a heavier dal. Urad dal does take time to cook and when slow cooked gets slimy.







Recipe of urad dal is straightforward, easy to make. There are a few variations to the basic urad ki daal with each version having an addictive, unique flavor. With warming flavors, urad dal made for a perfect vegetarian meal.

Ingredients: 

Urad dal 1/2 cup, wash and soak in water for 1-2 hours
Tomatoes 2, medium, finely chopped
Garlic 2-3 cloves, finely minced
Ginger 1", finely minced
Kasuri methi 1/2 tsp, crushed
Green chilis 3, slit
Turmeric powder 1/2 tsp
Red chili powder 1 tsp
Coriander powder 1/2 tsp
Garam masala powder 1/4 tsp
Salt to taste
Cilantro 2 tbsps, finely chopped for garnish
Cumin seeds 1/2 tsp
Oil 2 tbsp

Punjabi Rajma Masala | Red Kidney Beans Curry recipe by morEwish



Rajma, or red kidney bean curry is a go-to comfort food for many Indian people. Since I am adding more legumes to our diet I recently tried this recipe, since then having it very often. The creaminess of the red beans simmered in tomatoes with the spice from the gravy is perfect over a steaming bowl of rice or with chapati roti like we are having it.






Beans are a staple food in so many cultures around the world. They’re nutritious, contain protein as well as fiber, they’re widely available, inexpensive and above all- almost every culture has a comfort food version including beans.






Besides being easy to make, this dish is healthy and vegan. This recipe is so versatile, if you have a favorite way of making Kidney Beans, you can simply use this recipe as a guideline and use your spices!

Ingredients:

3/4th cups Rajma (Red kidney beans) or 1 can
2 tablespoons Oil
1 Bay leaf
1 small or ½ cup Onion chopped finely or food processed
1 teaspoon Ginger
1 teaspoon Garlic
½ teaspoon Turmeric powder
1 ½ teaspoons Red chili powder
1 teaspoon Coriander powder
1 teaspoon Cumin powder
2 medium or 1 cup Tomato pureed
½ teaspoon Garam masala
Salt

Shahi Daal Handi recipe by morEwish and Summer Update!



It was a looong Summer Break - But you know what it was totally worth it and much needed. Just after Eid we went to Washington to attend my Uncle's (Taya) 50th Wedding Anniversary Celebrations and my mom and dad joined us there. They flew all the way back from Pakistan to be part of this memorable event, to see all this commitment and compromising and love pouring all over since 50 years! *mashaAllah*




Then since we were already there we drove to NYC to spend 4th of July weekend! Mom and dad were happy to be back home, we took them to see their first apartment, dad went to see his office and luckily get a chance to see his colleague. DAMN! Right.. he was fortunate enough masaAllah!






It was our first time with this long road trip with kids, it was tiring but all worth it! Includes Zip lining, white water rafting, statue of liberty, time square at day time and at night time again!




But we are back to life and back to routine Alhumdulilah! So I tried this Shahi Daal Handi, it exactly as it sound.. Daal with a twist! Some garam masala, cooked with milk for creamier texture and then served with cilantro and roasted almonds!





Its supposed to be thicker than usual daals, you can serve it with Roshni roti or naan to enjoy more its deliciousness.

Ingredients:

Mash Daal (white) 1 cup (I used 1/2 mong and 1/2 masoor)
Tumeric (haldi) 1/4 tsp
Cardamoms (choti ailaichi) 2/3
Salt 1 tsp or taste
Milk 1 cup
Ghee 1 tbsp
Minced Garlic (kutta lehsan) 1 tsp
Cumin (Zeera)  1 tbsp
Chopped Onions 1/2 cup
Chopped tomatoes 1/2 cup
Garam masala 1/2 tsp
Chopped cilantro 2 tbsp
Roasted Almonds 2 tbsp (8 pieces)
