Tandoori Chicken Burgers (Ramadan Special, Freezer Friendly & Kid Approved) recipe by morEwish

 


These juicy, flavorful Tandoori Chicken Burgers are simple to prepare, freezer friendly, and perfect for Ramadan, whether for Iftar or for little ones who are not fasting.

These are made with The Spice Lane Tandoori Masala, freshly ground in Illinois and known for being 100% natural with no preservatives, no artificial colors, and no additives.

Ingredients

For the Tandoori Chicken Patties

1 lb boneless chicken (preferably thighs for extra juiciness)

(You can use half thighs and half breast if preferred.)

1 slice bread

1 tablespoon mayonnaise

1 teaspoon The Spice Lane Tandoori Masala

½ teaspoon The Spice Lane Red Chili Powder

½ teaspoon black salt

½ teaspoon salt (or to taste)

For the Cilantro Herbed Mayo

½ cup mayonnaise

¼ cup fresh cilantro, finely chopped

1 tablespoon fresh lemon juice

1 teaspoon minced garlic

Salt to taste

For Assembling the Burgers

Burger buns

Cheese slices

Mayonnaise (for spreading)

Lettuce

Sliced tomatoes

Sliced onions

Sliced cucumbers

Instructions

Step 1: Prepare the Chicken Mixture

Add chicken, bread, mayonnaise, and all spices to a food processor.

Blend until well combined but not overly smooth. The mixture should be soft but hold its shape.

Step 2: Shape the Patties

Use a burger press for even patties.

Or wet your hands lightly and shape them manually.

You can freeze the patties at this stage. Lay them flat on a tray first, then transfer to freezer bags once solid.

Step 3: Cook the Patties

Cook using your preferred method:

  • Grill (4–5 minutes per side)
  • Grill pan indoors
  • Shallow fry in a lightly oiled pan

Cook until internal temperature reaches 165°F.

Step 4: Make the Cilantro Mayo

In a small bowl, mix mayonnaise, cilantro, lemon juice, garlic, and salt.

Refrigerate for at least 30 minutes to allow flavors to develop.

Assembly

Toast the burger buns lightly.

Spread a thin layer of mayonnaise on the both sides of the bun.

Add a cheese slice.

Place the warm tandoori chicken patty on top.

Spoon a generous amount of cilantro mayo over the patty.

Add lettuce and your choice of sliced tomatoes, onions, and cucumbers.

Cover with the top bun.

Serve hot with fries and ketchup.

Chicken patty melt sandwich چکن پیٹی سینڈوچ recipe by morEwish

 


A juicy chicken patty with onions, creamy pepper sauce and melted cheese between crispy, griddled bread makes a delicious and easy weeknight dinner, iftar or school lunch!




The classic patty melt has been a staple of diners and restaurants across the US for decades. If you have never had one before, looking at it, it’s easy to make and turns out delicious.

A hearty sandwich bread works best for a patty melt, today I used whole wheat pita bread. You can use naan, sourdough bread or regular burger buns as well. 
A classic patty melt is topped with caramelized onions and Swiss cheese. If you’re not a fan of Swiss, cheddar or American cheese also work well.
The key to achieving perfectly caramelized onions is to use a large saucepan. The wide base gives your onions plenty of room to cook so the water released as they soften can evaporate.







This creamy pepper sauce is the real game-changer. It adds an incredible amount of flavors and takes this patty melt beyond the ordinary. Putting it together is quick and easy, so definitely give it a try. You can even double the recipe and keep it covered in the fridge for up to two weeks. Try it on fries or even as a dip for veggies!

Chocolate chip muffins چاکلیٹ چپ مفن recipe by morEwish

 


They are loaded with chocolate chips, tall muffin top and fluffy and moist in the texture. Tops are studded with extra chocolate and sugar to give them a delicious crunchy crust that sets these muffins over the edge.







I love enjoying a good muffin with a nice, warm cup of coffee, especially now that the fall weather is setting in. While girls love them warm with cold glass of milk. Besides flavor and texture, you’ll appreciate the simple ingredient list. You only need a few basic ingredients to make absolutely awesome chocolate chip muffins. Each ingredient is important and transforms boring muffins into bakery-style chocolate chip muffins! I add sour cream or buttermilk to this batter, it helps keep the muffins extra moist and I highly recommend it! And while measuring all purpose flour for this recipe, spoon into measuring cup and then level-off








Here I recomend stir the batter by gently folding it with a spoon or spatula and be careful not to over mix the batter, as that can produce tough muffins.
Be careful not to bake the muffins for too long. The muffins are done baking when you insert a toothpick into a muffin and it comes out clean or with a few moist crumbs.
These muffins stay fresh in an airtight container at room temperature, if you choose to refrigerate your muffins, I recommend heating them in the microwave for about 15 seconds before serving.

Roast Beef Sandwich روسٹ بیف سینوچ recipe by morEwish

 


Tender, savory pot roast piled on fresh baked french bread and smothered in caramelized onions, cheese, and mayo. Are you drooling yet?






When ever I make Pot Roast, we almost always have leftovers, which I love! I never mind reheating leftover pot roast, but I’ve found an even better solution to using up those leftovers Pot Roast Sandwiches! Oh and keep in mind this is also a great way to use up DRY pot roast. Everyone hates over cooked dry pot roast and this is an easy way to use it up and actually enjoy it!





You can include the veggies from the roast if you want, or just use the meat. Even if the roast recipe has onions in it, I still recommend adding the caramelized onions that's my husband's favourite. Trust me, that hint of sweetness really puts them over the top!

Popcorn پاپ کارن on stovetop by morEwish


Of all the salty, crunchy, savory snacks out there, stovetop popcorn is one of the tastiest and cheapest snacks. This cooking method for Stovetop Popcorn is so easy, results in nearly every kernel popping and nothing burns, leaving you with a nice big bowl of beautiful popcorn!






I’m on a mission to make sure everyone knows how to make popcorn from scratch. Today, I’m sharing all of my popcorn-making tips so you can make perfect stovetop popcorn at home, too. All you need are popcorn kernels, a good pot with a lid, oil and salt. You can do it! 








Always use a good, heavy-bottomed pot. Don’t crank the heat up too high. It’s too easy to burn oil at temperature higher than medium heat, and if you catch even a whiff of smoke coming from the pot, your popcorn is going to taste burnt.

Start with two popcorn kernels to gauge the temperature. Once those pop, your oil is hot enough. Add the remaining kernels and remove the pot from the heat for 1 minute. This primes the popcorn to pop without burning the oil.

Tip the lid ever-so-slightly while the popcorn is popping. That way, the popcorn doesn’t steam itself in the pot and lose crispness. Continue cooking until the popping sound slows to about one pop per every few seconds. 
Remove the lid and dump the popcorn into your serving bowl. Sprinkle the popcorn with a couple pinches of salt, to taste, and any other topping you would like. Toss the popcorn and serve immediately, for best flavor and texture. The popcorn will taste good for several hours, though. Season with salt carefully. You can always add more, but you can’t take away too much.

Avacado Toast آواکاڈو ٹوسٹ recipe by morEwish


 

Whole grain toast with mashed avocado, a runny egg and a sprinkle of crushed red pepper  – 5 ingredients, 5 minutes to make, it doesn’t get better than that!






Lately, I’ve been obsessed with avocado toast for breakfast, especially when I have avocados in my fridge that need to be used up. It’s a simple, healthy breakfast when you need something delicious and fast. Whether you toss them together for breakfast, enjoy them for lunch, or make them for a quick and easy dinner, I hope you love them as much as I do!









Made with good bread and ripe avocados, even simple avocado toast is delicious. However, it can also serve as a template for all sorts of fun toppings. Try adding chopped fresh herbs, a drizzle of extra-virgin olive oil, black pepper or red pepper flakes. Or if you don’t like eggs, leave them out! Swap the sunny side egg for poached egg and top with greens or swap with scrambled eggs and top with some salsa, or just use hard boiled eggs and add tomato and scallions.  I love to sprinkle "Everything but the bagel” seasoning on top. Or if you don’t like your avocado mashed, slice it! And if you have tahini sauce, cilantro lime dressing, pesto, or chipotle sauce on hand, even a small drizzle will kick your toast up a notch.

Potato Quesadilla/Tacos پوٹیٹو قیساڈیا recipe for Ramadan by morEwish

 


These potato quesadilla or tacos are filled with spicy mashed potatoes and lightly fried to create the perfect crispy crunchy outside and creamy interior. Serve them with side of ketchup or salsa for a fresh and bright bite!






I am sooo excited for you to make this carb heaven recipe with a cheesy hat. This is one of the easiest recipe I made for this Ramadan. You can definately modify this recipe according to your liking, you can sautee garlic with onions or add chopped cilantro and green chilies in filling, or even some shreded chicken to take it to another level. 






This easy potato tacos recipe is unexpected, and unexpectedly delicious.

Desi style fried chicken aka بروسٹ broast recipe by morEwish

 



These Crispy breaded chicken drumsticks are seasoned well, steamed then coated in breadcrumbs creating a delicious, golden crust. Juicy on the inside and wonderfully crispy on the outside. This is such a quick and easy chicken recipe, ready in around 30 mins. 







I steamed this chicken first with yogurt base marination, it makes chicken pieces more flavorful and cooks evenly. Today I oven fried this chicken (baked), but you can deep fry or even air fry this chicken as well. 

In my opinion this is the BEST Oven Fried Chicken recipe! It comes crispy right out of the oven, is much lower in fat, taste just like any fried chicken but it’s baked instead of fried! 
The cooking time will also depend on the size and thickness of your chicken, so be sure to always check to make sure your chicken is done. The safest way to do this is with a meat thermometer. You want to ensure the chicken has reached 165 degrees F in the thickest part.







I prefer to use a wire baking rack over a cookie sheet to ensure even crisping. If you don’t have a wire rack, you can place the chicken legs right on the foil that’s been sprayed with nonstick cooking spray. But wire rack helps air to circulate around the pieces of chicken so they can cook more evenly.
And spray with butter flavor cooking spray before baking for that golden skin. I recommend the butter one here for the flavor factor, but you can use regular cooking spray as well.

Oatmeal Peanut Butter Chocolate Bars اوٹمیل بارس recipe by morEwish

 



Soft and chewy peanut butter oatmeal bars made with healthy, wholesome ingredients. Perfect for a quick and healthy snack!






These Healthier Oatmeal Peanut Butter Chocolate Chip Bars are sweetened without refined sugar. Instead, they are sweetened with honey, you can use orignal maple syrup or agave! These bars do contain a small amount of sugar from the chocolate chips, unless you get chocolate chips without sugar. I think it’s worth it for that tiny bit of sweetness! You could also try switching out the chocolate chips for something naturally sweet like dried fruit.






I’ve made two more batches of these this past week because they are that good and Eashul loved them way too much! I wanted these bars to be on the healthier side, so I used oats and almond flour. When it comes to baking a little healthier, I love to use all purpose flour alternates you can use whole wheat flour or any gluten free alternate as well and it works so perfectly in these bars.

Annddd.. there’s zero butter in these bars too, just peanut butter and a little coconut oil. I also threw in some chocolate chips because chocolate + peanut butter is always a winning combination.

In Home Online School آنلاۂن اسکول setup | Back to school fall 2020

 



Are you sending your kids to school physically or they will study online? How many times did you answer this question? I will declare this a question of the century and frequently asked question of 2020! 







When online or in-person debate is over because schools across our town have moved to reopen with online-only instruction atleast for Fall. Then I ask a question to myself, do I have that setup? It might continue like this for another year. And online schooling will look a lot different than in the spring. Kids have to check in daily and will follow a regular bell schedule and be graded

My target was to find a space which can be a designated space for girls online academy, so everyone could work easily without interruption. I reminded myself, you are living in your space differently now, it has to be comfortable, it has to be something that if you are going to be spending a lot more time, it has to be funtional, too






Girls thoughts: 

Eashul 12 year old and starting 7th grade is not ready for this. When we had a choice to pick hybrid or online she wanted to do online and decided not to go to school until world is corona free. Now she is worried about using screen all day. Its her age, hormones and as a matter of fact real concerns.




While Ellmyra 9 year old starting 4th grade was confused before, because she misses her friends, reccess and school fun but was scared of corona, and now she kin dof feel meh about this online academy setup 






My points to motivate them (or myself as well) 

🔹️ You guys are making history- this never happened before and will not happen in future (inshAllah). You can tell your kids that you actually experience that what they will be reading in their history books

🔹️ It’s gonna be so much fun especially lunch and snacks, no snack limit, mom will make different  lunches and you will get hot lunch everyday! 

🔹️ How convenient it is that you are studying with a comfort of home

🔹️ We will plan a recess time as well, you can play in yard or outside or call your friends to get that school feeling. 

🔹️ Right after school is dismissed, no homework (my guess 😉) because class work is what you are doing at home, so class work is homework and homework is class work 🥴🤭


Were they convinced? Eashul still had her reservations but Ellmyra thinks this year will be interesting and she is ready to give it a try!

Back to school Lunch Recipes اسکول لنچ Ideas 2020 by morEwish | Hybrid 🏫 or remote learning 💻




After all kids are going back to school, some of you are sending your kids in person or some of us picked online session, one thing we all are doing is making lunches! Today I am sharing two different recipes for kids school lunches








Sauteed chicken with some basic seasoning, mixed with corn, cilantro and cream cheese, creating one of the delicious creamy chicken spread! You can add any other vegetable or herbs as well. I added green chilies for the heat but can easily be subsituted by crushed red pepper.








You can use the same filling and fill in small tortillas for chicken and cheese taquitos. These sandwiches can freeze very well as well. Right after assembling just freeze in ziplock bags and toast them before serving.










The second recipe is almost like a treat for kids, especially those who are remote learning. They can get advantage of having a hot lunch (of course if its doable by parents/guardians).

These loaded fries can easliy assembled in less than 15 minutes, again you add any other sauces and meat of your choice, and serve your kids as a Friday lunch or as a weekend treat. Its great for game night and as a party snack

Baked Potato Nachos آلو کے ناچوس recipe by morEwish



 Nachos meets Baked potatoes aka Potato nachos. Almost like nachos but instead of tortilla chips using sliced potatos with same nacho topings! If you are a fan of Nachos and Baked Potatoes, this is the recipe for you!








Potatoes instead of nachos is brilliant! Once they are seasoned and baked you can pretty much add what you want. Follow the basic recipe and try it with different things. Finger food is always a winner for a party, these nachos feed a crowd, and you can easily double the recipe without much extra effort if you have a bigger party.

Ingredients: 




4  potatoes cut into slices about 1/8 to 1/4 of an inch thick
3 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
4 ounces cheddar cheese, shredded
4 ounces mozarella cheese, shredded
Chopped tomatoes, jalapenos, cilantro and Sour cream for garnish
