Tom Yum Soup (Thai Soup) تھاۂی سوپ recipe by morEwish

 



Tom yum is probably the most popular and famous Thai soup for all good reasons. Its simple, delicious and healthy! The soup is served piping hot and the forward flavors are sour and spicy. In Thai, “tom” translates into “boiled” and “yum” refers to the traditional sour, salty, and spicy flavor of an array of Thai dishes.








There’s two different types of Tom Yum Soup: Clear Tom Yum Soup (Tom Yum Goong Nam Sai); and
Creamy Tom Yum Soup (Tom Yum Goong Nam Khon) which is made from the clear version with the addition of evaporated milk and a good hit of Thai Chilli Paste.

I personally like both equally so I don’t play favourites. The creamy version has a slightly bigger flavour punch because of the addition of the chilli paste, while evaporated milk changes the appearance.

Ingredients



Broth:

6 cup water
1 cup chicken stock/broth , 
4 teaspoon lemon zest or 2 stalks of lemon grass
1.2'' piece ginger
4 -6 pepper corns
4 red chilies
6 garlic cloves
1 1/2 tablespoon Thai fish sauce 

Soup:

1 lb Shrimp
4 oz button mushroom/ oyester mushrooms
1 roma tomato , cut into wedges
1/2 white onion (medium sized), sliced
1 tablespoon sugar
6 tablespoon fish sauce 
6 tablespoon lime juice
Cilantro, for garnish

To make creamy version:

3 tbsp Thai roasted chili sauce
150 ml evaporated milk

Potato Soup آلو کا سوپ with Garlic Bread Grill Cheese Sandwich recipe by morEwish





Crisp cool air, beautiful color foilage, layered clothing and a bowl of hearty warm soup!  To be more specific Potato soup with crispy garlic cheese toast. This easy potato soup is creamy and luxurious! 








I love that it’s something everyone in my family can agree on and get’s excited about when I tell them it’s what’s for dinner. I also love that I usually have all the ingredients on hand to make it. You can serve this soup brothy or thick and blended. My family love both and making them is the same except for the last step. For a thick, luxurious, and blended soup use a potato masher or immersion blender to puree or mash about half or two thurd of the potatoes in the soup to thicken it.







To make it a complete meal, I served it with cheesy garlic toast. You can serve ir with crackers or with any plain bread as well or just a garlic bread would do. But this bread is bomb, its a cheese sandwich with garlic spread and toasted to perfection

Ingredients: 




Potato Soup:

3 tablespoons butter or olive oil
2 cups chopped onion (1 medium)
1 cup chopped carrot (2 medium)
1 cup chopped celery (2 to 3 stalks)
1 tablespoon minced garlic (3 cloves)
1/4 teaspoon crushed red pepper flakes
3 tablespoons all-purpose flour
4 cups stock or broth, see our chicken stock or vegetable broth
4 cups chopped potatoes, cubed (1 1/2 pounds or 3 to 4 medium)
1 bay leaf
Salt and fresh ground black pepper
1/4 cup cream, half and half, sour cream or plain yogurt
For serving (optional): Chopped parsley, chives or scallions, shredded cheese, sour cream


Garlic Cheese Toast:

8 french bread slices
4 tablespoon butter
1 teaspoon mince garlic
1/2 teaspoon minced parsely 
4 cheddar cheese slices
Butter for toasting

Chicken 🍗 Corn 🌽 Soup 🥣 recipe by morEwish






Weather is changing in most part of the world, its getting chilly and cold and this weather calls for soup. So, today I thought to make hearty bowl of traditional Pakistani street style Chicken 🍗 Corn 🌽 Soup 🥣 .This is how I remembered it growing up in Pakistan. There is nothing like a bowl of Chicken Corn Soup when you're under the weather or just wanting some comfort food.







This Corn Soup aka Egg Drop Soup is just like you get in restaurants or at streets back home! Made from scratch, and on the table in 15 minutesI make my own chicken stock, you can use store bought as well, but then hold on salt since store bought a higher in salt.
As soon the weather changes I make big batch of Stock/broth and keep them in freezer.

Ingredients: 


Chicken Stock/Broth -  4 cups, plus 1
Cream of corn - 1 can (substitute 1 can kernel corn blended with 1/2 cup milk/water)
Chicken - 1 to 2 cups, shredded
Salt 1 tsp or to taste
White pepper 1 tsp
Corn flour/starch 3 tbsp
Eggs 2-3

Nacho Chicken Soup 🍲 | Hello 2018 🎆 | New year recipe by morEwish




This Nacho Chicken Soup is overflowing with bold flavors.. It’s a crowd pleasing, hit and a fabulous weeknight meal. Good, wholesome, hearty ingredients with bold, irresistible flavors, all the food groups in one big pot and takes only 30 minutes.
I am pretty confident that if you try it, you’ll like it. And everyone else will like you for making it!






I made this soup for a crowd on my daughters birthday party. Serve it in a crockpot with all the garnishes on the side, including shredded cheese, chopped cilantro and tortilla chips, because I couldn't find any halal Nacho chips (If you find them some where please let me know)




I use my homemade Chicken Broth use can use store bought as well, I make a big batch of stock and keep it in freezer.
For cheese I use cheddar but pepper jack would go very well with this recipe too

Ingredients:


2 - 3 cups chicken, shredded with its juices (or 1 rotisserie chicken)
2 tbsp olive oil
1 large onion, chopped
2 tbsp minced garlic
2 tbsp ground cumin
1 tbsp dried oregano
1 tbsp chili powder
2 (15 oz each) cans fire-roasted tomatoes, with all its juices
12 oz sweet corn kernels
15 oz can black beans, rinsed well and drained
4 cups regular chicken broth
1 cup cheddar or pepper jack cheese, shredded
Salt and freshly ground black pepper to taste

Garnishes: avocado, cilantro, and nacho chips

Chicken Noodle Soup 🍵 recipe by morEwish




Today I made comforting bowl of hearty soup - Chicken Noodle Soup. Perfect for cold weather, and especially good if you are fighting off a cold or flu. There are probably as many ways of making chicken noodle soup as there are moms who make it.





Try this easy chicken noodle soup recipe that comes together in just 25 minutes. My version of the ultimate feel-good food, Homemade Chicken Noodle Soup is full of vegetables like carrots, celery, and onions. Slowly cooking a chicken, fragrant herbs, and fresh vegetables in chicken broth rather than water imparts a rich flavor to this soup.


The key is the stock, homemade from bones. The iron rich gelatin from the bones is good for you, and one of the reasons why homemade chicken stock is so beneficial.

If you don’t already have homemade chicken stock, the following is a recipe for making the entire soup from scratch

Ingredients:

2 tablespoons olive oil
1 medium onion, chopped
3 garlic cloves, minced
2 medium carrots, cut into 1/2-inch-thick slices
2 celery, halved lengthwise, and cut into 1/2-inch-thick slices
1 bay leaf
2 quarts chicken stock,
8 ounces dried egg noodles
1 1/2 cups shredded cooked chicken
salt and freshly ground black pepper
1 handful fresh parsley, finely chopped

Chicken stock or broth made by boiling chicken bones in water, with various vegetables and flavorings. Basic chicken stock recipe for soups and dishes

1 whole chicken (about 3 1/2 pounds),
2 carrots, cut in large chunks
3 celery stalks, cut in large chunks
2 large white onions, quartered
1 head of garlic, halved or 1 tbsp mince garlic
2 bay leaves
1 teaspoon whole black peppercorns

Chicken and Pasta Soup


So, today we had snow, and when weekend and snowfall comes together means your kids are doing inside out, wet boots and jackets, and cold house. Full of nutrition with kids favorite macaroni, means warm soup was my option chosen to warm my family, with warmth and love of motherhood ;)

Chicken stock 4 cups
Shredded Chicken 1/2 to 1 cup
Boiled Macaroni 1/2 cup
Chicken Powder 1 to 1 1/2 tsp
Salt to taste
Black pepper 1 tsp
Vinegar 3 - 4 tbsp
Corn starch 2 -3 tbsp
Eggs 2, beaten

Boil chicken stock, add chicken powder, black pepper, salt (if requires), vinegar mix well and cook


Add shredded chicken and macaronis. Now adjust seasoning.

Add corn starch mixed with water, mix continuously.

Now, add beaten eggs and stir.


Done. Serve warm with other condiments, and Enjoy!

p.s. i add some soy sauce as well with other seasoning, around 1 tbsp
