Flower shaped, buttery flaky pie crust, filled with creamy cheesy chicken... since they are mini, handheld perfect bite size.
Great for kids parties, picnics, lunch boxes, pot lucks and just on a day! I usually made them in Ramadan for iftaar as well, they are equally popular among kids and adults..

For dough:
all purpose flour 2 cups
butter 1/2 cup (125 gm)

bell pepper 1 medium (small chunks)
cheese - blend of mozzarella n cheddar
oregano - optional
red chili flakes - optional
First we have to make a dough:
sift flour with baking powder and flour
add softened butter.. and rub the dough with butter
it will become like crumbs
now, gradually add milk in and make a dough
separately make chicken filling... heat oil or butter...add onions and garlic cook till soft
add chicken pieces..cook till chicken changes it color... cover for 2-4 minutes....
cook till chicken release water and tender
Add flour...give it a quick stir then add cream and milk... and mix immediately...
add chopped bell peppers
cook till mixture thicken
mix and mash chicken with spoon so that i will break...
I was using it for kids school snack so i mashed it with the hand blender coarsely.. .that is totally upto you... how big pieces you want
Now, baking... roll the dough.. and cut it with flower shape cookie cutter
put the flower in greased muffin baking tray
prick it with fork
and bake them for 6-8 minutes... we don't want them to done completely at this point...
fill the hollow of florets with the filling... and then sprinkle some cheese... and bake them till cheese get melt...
and done :)

DeleteMashallah ur an amazing cooked. Checked your blog and I'm tempted to try so many of ur recipes. I tried these mini chicken pies today they look beautiful. Wish I could send u the pic .i just have one question about the dough, is it suppose to be soft like pizza dough or it should be flaky? I mean a bit tough from outside and flaky from inside?havent tried chicken pie ever so just wanted to confirm.
ReplyDeletethank u so much Erum for ur lovely comments :) n please upload ur pics too u can do it on my FB page as well
Deletedear dough would look like cookie dough type... coz it has lot of butter in it it will not at all flaky type... for an example it will similar to roghni roti dough or may be poorian dough :) hope it helps
What's the purpose of poking with the fork? If you don't mind me asking.
ReplyDeletei really don't mind you can ask anything... when u poke it with fork it will prevent from swelling up during baking
ReplyDeleteLovely recipe Mahwish.. Can I use puff pastry (ready made) instead of dough? If so do I prick it too before baking?
ReplyDeletethanks for appreciation dear! if u use puff pastry... result would be entirely different... coz puff wont retain that flower shape as well... so keep in mind taste, look and feel wont be same
Deletebut why dont u give it a try...do experiment it... and if u go for it dont prick it... coz its a puff pastry and we want it to puff... and brush it with egg wash... so you will get a crispy and nice golden color base...and if u try please share ur picture on my FB page..
