This chicken melt makes an ideal lunch or dinner because, aside for cooking the chicken, there’s not a whole lot to do. And if you consider preheating the oven, adding some seasonongs and putting the baking sheet in the oven a lot of work…well, then this recipe is definitely for you. 😉
The best part about these sandwiches is that they are made all at once on one baking sheet. Pre-heated oven toast the bread so it remains crisp as the cheese melts and chicken heats through. These cheesy, chicken sandwiches are toasty and delicious right out of the oven. Whenever I have leftover chicken, I cut them up and use that. Make a big batch and freeze it as well.

1 loaf french bread, sliced
1 lb chicken, boiled and shredded3/4 cup mayo, or to taste
1 tsp salt
1 tsp paprika
1/2 tsp freshly ground pepper
1 tsp garlic powder
1 large tomato, diced
1/3 bunch Cilantro
6 oz mild cheddar cheese, finely shredded inside or a slice of cheese on top.
Sriracha hot chili sauce to taste, or your favorite hot sauce (optional)
