Pizza with our desi BBQ chicken... yet another famous and most demand-able pizza in our desi famous restaurants... i used:
for pizza dough
all purpose flour 3 cups
yeast 1 tsp
sugar 1 tsp
salt 1 tsp
butter 1 - 2 tbsp (optional)
water for kneading
to cook chicken:
chicken boneless 150 gm (small cubes)
tikka masala 1 -2 tsp ( i used my home made masala - http://morewish.blogspot.com/2012/04/chicken-tikka.html)
garlic minced 1/2 tsp
oil 1 tsp
charcoal to smoke
to assemble:
cooked chicken
pizza sauce
onion cubed
cheddar cheese
mozzarella cheese
red chili flakes to sprinkle
oregano leaves to sprinkle
first make a pizza dough:
mix yeast with 1/4 cup of warm water and keep it aside... after few minutes you will see frothy texture... which means your yeast is perfect and activated and good to use
this is an optional technique to use yeast, but a safest way to save other ingredients and to check on yeast
you can directly add in flour
in mixing bowl with flour add sugar and salt and yeast mixture
and make a soft dough with warm water
cover and keep that dough aside for atleast an hour or till it completely rise
separately make chicken...
heat oil add minced garlic
add chicken cubes and tikka masala
mix and cook till tender... make sure reduce all the water
heat charcoal... and place it on foil on cooked chicken... spray/drop oil over burned charcoal and cover the pot immediately... keep it on side and cool completely
for thin crust... you can easily make two 12 inches pizzas wit the prepared dough... so divide the dough in 2 portions... take one part... roll and put it on greased pizza pan...
i roll on pizza plate with the help of butter/oil... you can use dry flour
spread the pizza sauce... and sprinkle some cheese ... now cover and leave it for second rise (15 - 20 minutes)
after second proofing... put the chicken pieces on rolled pizza and onions
lavishly sprinkle cheddar and mozzarella cheese then sprinkle red chili flakes and oregano leaves
bake it on highest temperature of your oven till done
