Step-by-Step Instructions
1. Prepare the Beef Filling
In a pan, cook the ground beef on medium heat until no longer pink.
Add salt, roasted cumin, roasted coriander, red chili powder, crushed red chili flakes, ginger paste, and garlic paste. Stir well.
Let the mixture cook until all moisture evaporates and the beef is dry. This helps prevent soggy samosas.
Once cooked, let the mixture cool down completely before adding any vegetables.
2. Add Fresh Ingredients the Right Way
Finely chop the onion, transfer it to a cheesecloth or muslin cloth, and squeeze out all excess water. This step is crucial to prevent soggy or overly soft samosas.
Once the beef is completely cool, add the squeezed onions, green chilies, and fresh cilantro. Never add these while the beef is hot or even warm—otherwise, the veggies will release water, making the filling wet and the samosas soggy.
3. Shape and Fill the Samosas
Take one samosa patti and fold it into a triangular cone shape.
Fill the cone with a spoonful of beef filling.
Seal the edges using egg white flour paste to prevent any leaks.
Repeat the process with the remaining pattis and filling.

4. Fry or Air-Fry – Your Choice!
Deep-Frying: Heat oil in a deep pan to medium-high heat (about 350°F). Fry the samosas in batches, flipping occasionally, until they turn crispy and golden brown. Remove and drain on a paper towel.
Air-Frying: It’s been a couple of years since I started air-frying my samosas, and my family loves them! Preheat your air fryer to 375°F and brush the samosas lightly with oil. Air-fry for 10-12 minutes, flipping halfway, until crispy and golden brown.

You may have seen or tried different samosa recipes, but it’s the small steps that make all the difference! From squeezing out onion moisture to letting the filling cool completely—these details ensure that your homemade samosas turn out just as crispy, flavorful, and "garma garam" as the ones you buy from stores.

For the Beef Filling:
1 lb ground beef (lean for less oiliness; I prefer 90/10)
1 tsp salt (or to taste)
1 tsp roasted and crushed cumin
1½ tsp roasted and crushed coriander
½ tsp red chili powder
1 tsp crushed red chili flakes
1 tsp ginger paste
1 tsp garlic paste
2 tbsp green chilies, finely chopped (adjust for spice preference)
4 tbsp fresh cilantro, chopped
1 medium onion (200g, or less if preferred), finely chopped

1 tbsp flour (mixed with egg white or little water to make a paste for extra sealing strength)
Samosa patti (store-bought or homemade wrappers)
