i believe for your parents, everyday is their day, but as a tradition Father's Day is celebrated every year.. so on behalf of my daughters... I baked that cake for my husband...
For cake:
butter 8 oz (8 tbsp)
brown sugar 8 oz (1 cup)
vanilla essence 1 1/2 tsp
eggs 4
flour 6 oz
baking powder 2 tsp
cocoa powder 4 oz (1/4 cup)
cooking chocolate melted 4 oz
milk 4 tbsp
for fudge icing:
butter 4 oz (4 tbsp)
cream 3/4th cup
cooking chocolate 4 oz
cocoa powder 2 tbsp
vanilla essence 1 tsp
icing sugar 10 oz (1 1/4 cup)
in a mixing bowl add butter
add brown sugar, mix well till light and fluffy
add vanilla essence mix well
separately sift flour, baking powder and cocoa powder
mix all sifted dry ingredients well
add one egg and 1 -2 tbsp of flour mixture in prepared mixture... mix well... then another egg and some mixture... continue doing the same till all eggs combined well.
add the remaining flour mixture mix well till combined
add the melted chocolate.. mix well till combine together
pre-heat oven on 350 F / 180 C... and grease two 8 inch round pans... and dust them with some flour
pour the prepared chocolate cake mixture in the pans
and bake them for 35-40 minutes or until done completely
take the cake out of the pans on wire rack... and cool completely before icing
for icing: in a pot add cream, butter, chopped cooking chocolate and cocoa powder... cook on low heat till chocolate melts
now keep that icing aside... and cool completely...
in cooled icing add icing sugar... but please sifted else getting rids of lumps would be most difficult at this stage
mix well til combined and fudge icing is done
now, assembling:
take one cake, spread the 1/4th of prepared icing
put the other baked cake over it... start spreading remaining icing on side and on top...
cover completely
now, decorate as desired..
