Chicken Tikka Karhai (Super highway style)


 I saw this recipe on different cooking shows, its been long haven't been to Pakistan so haven't tried it, but heard that's a famous dish and can be found in Super Highways restaurants... I compiled different chefs recipes... try it and leave comment down below.. you need:

chicken 1 - 1 1/2 lb
ginger 1 tbsp
garlic 1 tbsp
oil 1/2 cup
salt to taste
lemon 4 -5 tbsp
green chilies 12 - 15
cilantro chopped 2 -3 tbsp

Masala ingredients: 

chat masala 1 tbsp
toasted and crushed cumin 1 tsp
toasted and crushed coriander seeds 1 tsp
crushed red chili flakes 1 tsp
crushed black pepper 1 tsp
qasoori meethi 1 tsp
garam masala 1 tsp

wash and pat dry chicken pieces and give them cuts.



deep fry all these pieces until they get gold color on top and take them out on paper towel (Dont worry for its tenderness, we'll cook it later), when chicken is about to get color add green chilies and fry them with chicken


separately in bowl combine, chat masala, cumin, coriander, red chili flakes, black pepper, qasoori methi and garam masala.. mix well and keep it aside


now, heat oil add ginger and garlic paste


fry for 1 -2 minutes add fried chicken pieces and green chilies, stir for sometime add salt and little bit of water (2 -3 tbsp).. mix well, cover and cook on medium to low heat until chicken is fully tender, add 1 -2 tbsp of masala we made mix and switch off flame


when serving, dish out, squeeze fresh lemon juice on top and sprinkle masala on top, some cilantro and chopped ginger and serve with nans
