Okra which is called bhindi in urdu/Hindi language.... Can be cooked in very different methods.. most common are with curry and the other is stir-fried style with spices which I made today... and i learned this recipe from my mom.. so the ingredients are:
Okra (bhindi) 250 gm (i used the frozen packet one)
oil 2 tbsp
garlic paste 1 tsp
salt 1 tsp (to taste)
red chili flakes - 1 1/2 tsp
turmeric 1/4 tsp
cumin seeds (zeera) 1 tsp
onion 2 tbsp (sliced)
tomatoes 2 medium (chopped)
heat oil, add sliced onion and cook till translucent - don't let them change the color because it will change the color of your dish and taste...
Add cumin seeds...give it a quick stir
Add chopped tomatoes.. let them cook for 2 -3 minutes
Then, add garlic paste, salt, red chili flakes, turmeric and mix and cook till tomatoes get tender
Add okra and mix...
now cover and cook on low heat till extra water dries... don't add water... we don't want to over cook it... it will get tender with its own water
It will be done in 10 min maximum... mix and switch off
Dish out and serve with naan (bread)
