Vegetable Pulao

healthy and yummy recipe to have in this summer time... and use as much vegetables as you can.... i used potatoes, peas, tomato and carrots... you can add cauliflower, cabbage, bell peppers, beans, and much much more.... you need:

rice 2 1/2 cups 300 gm
onion 1 medium sliced
tomato 1 medium chopped
potatoes 2 medium cubed
peas 1/2 cup
carrots 1/2 cup cubed
minced garlic 1 tsp
ginger 1 tsp
stock cube 2 
salt 1/2 tsp (to taste)
fennel seeds (saunf) 1 tbsp
coriander seeds (sabut dhaniya) 2 tbsp
bay leaf 1 - 2
pepper corn 5-6
cloves 4-5
black cumin 1 tsp
white cumin 1 tsp
ani star seed 1 
oil 1/4 cup
green chilies 1 - 2 (optional) 

take a cheese cloth/muslin cloth add in coriander seeds, fennel seeds, pepper corns, cloves, black cumin, and bay leaves... tie a knot and make a pouch... now make sure its sealed

heat oil in pan, add sliced onions

fry till it get soft... add cumin seeds mix, add garlic and ginger

add chopped tomatoes... and cook till they get tender and soft

add that spices pouch mix add cubed potatoes, mix and fry for 2 -3 minutes

add water enough for rice to get cook and for veggies as well...  add 1 stock cube... cover and cook till potatoes get almost done...

add  peas and carrots and any other vegetable that you are using and cook for some time... please don't over cook veggies...

add rice, another stock cube and salt cover and cook till water bubbles come on rice

mix, add 1 - 2 green chili on top... simmer and cover... and cook till rice get done completely

dish out and serve with yogurt dip
