This Nacho Chicken Soup is overflowing with bold flavors.. It’s a crowd pleasing, hit and a fabulous weeknight meal. Good, wholesome, hearty ingredients with bold, irresistible flavors, all the food groups in one big pot and takes only 30 minutes.

I made this soup for a crowd on my daughters birthday party. Serve it in a crockpot with all the garnishes on the side, including shredded cheese, chopped cilantro and tortilla chips, because I couldn't find any halal Nacho chips (If you find them some where please let me know)
I use my homemade Chicken Broth use can use store bought as well, I make a big batch of stock and keep it in freezer.
For cheese I use cheddar but pepper jack would go very well with this recipe too

Ingredients:
2 - 3 cups chicken, shredded with its juices (or 1 rotisserie chicken)
2 tbsp olive oil
1 large onion, chopped
2 tbsp minced garlic
2 tbsp ground cumin
1 tbsp dried oregano
1 tbsp chili powder
2 (15 oz each) cans fire-roasted tomatoes, with all its juices
12 oz sweet corn kernels
15 oz can black beans, rinsed well and drained
4 cups regular chicken broth
1 cup cheddar or pepper jack cheese, shredded
Salt and freshly ground black pepper to taste
Garnishes: avocado, cilantro, and nacho chips
