Simple and healthy Aloo Palak is a vegan dish where spinach and potatoes are cooked together with spices. My homemade version of aloo palak uses minimal spices making it so comforting. Its my mom's recipe and she used to make it a lot during winters when we would get really good fresh spinach in the market.
Aloo palak can be made in a number of ways. The version I’m sharing today is a dry version of aloo palak. It comes together quickly and what I like most about this recipe is that it uses simple spices and ingredients.

Ingredients:
Potatoes آلو 3-4, medium, cubed
Spinach, پالک 1 lb, chopped
Red button chillies (Sabut lal mirch) 7 -8
Cumin (zeera) 1 tbsp
Salt
Turmeric powder 1/4 tsp
Dry Fenugreek leaves (qasoori meethi) 1/2 tsp
Oil 4 tbsp
