Mutton Yakhni Pulao (Rice cooked in Mutton Stock)



Pulao is a dish in which rice is cooked in a broth with any kind of meat or veggies... this time I made this with mutton so the ingredients are:

Mutton 1 lb
Rice 3 cups
salt 3 tsp (to taste)
fennel (saunf) 1 tbsp
coriander seeds (sabut dhaniya) 2 tbsp
ginger paste 1 + 1 tsp (1 for stock, 1 for rice)
garlic paste 1 + 1 tsp (1 for stock, 1 for rice)
onion 1 medium for stock + 2 tbsp sliced for rice
tomatoes 2 roughly chopped
cumin seeds (zeera) 1 tsp
oil 3-4 tbsp

First we have to make a broth... take the ingredients out...



put all ingredients in water with washed meat...
Now, the question comes in how much water??? briefly i would say, add as much water you need to add in rice to get them cooked plus some more for meat to get tender...

In quantitative terms, i used same amount as rice are  plus half of it and plus 1 more cup for meat to get tender... e.g. if ur cooking 1 cup of rice so water to cook rice would be 1 cup plus half of it i.e. 1/2 cup...and plus 1 cup for meat...

Cook on low heat covered till meat get tender... drain the broth and keep it aside.




Now, in separate pan heat oil, add slices onion and cook they are soft



Add cumin seeds, quickly stir


and add tomato... and cook they are soft...add ginger and garlic paste in between



Add the meat only from the stock mix and cook till oil comes up or separate


Add the strained broth in this and give it a boil..Add the soaked and drained rice... and salt




And cook it on high flame, till you see only bubbles and rice are almost done... mix and simmer and leave it (dum) for 10-15 minutes..

And there you go... your mutton yakhni pulao is ready
