One more Chutney to make your Ramadan more Chat patta... its tomato based tangy chutney... have it with paratha or with plain pulao's.... or like my hubby - all time with everything :)
tomatoes 1 lb
salt to taste (1/2 tsp)
red chili powder 1/2 tsp
red chili flakes 1/2 tsp
turmeric powder 1/4 tsp
minced garlic 1/2 tsp
mustard seeds (rai dana) 1 tsp
oil 1/4 cup
curry leaves 8 - 10
whole red chilies 4-5
cumin seeds 1/2 tsp
chop tomatoes in small cubes
heat 1 tsp of oil, add mustard seed and cook till they start splutter
add chopped tomatoes with 1/4 cup of water
then add, salt, red chili powder, red chili flakes, turmeric powder and garlic
mix and cook on low flame till tomatoes get tender and you get desired consistency
transfer in serving bowl or for storage in clean jar/bottle
heat oil in other pot... (enough oil which would cover the chutney.... it will protect chutney to last long)
add whole red chilies... fry for 2-3 minutes
add washed and dried curry leaves... then add cumin seeds....
pour immediately over a chutney
let it cool completely... cover and refrigerate for future use... and Enjoy in your sehr or Iftar :)
