Triple Chocolate Chip Cookies


Chocolate - Chocolate - Chocolate... Triple Chocolate Chip.... mouth watering, chewy, and full of chocolaty cookies... for kids and kid who live in your heart.... 

6 ounces semisweet chocolate, ( I used  Ghiradelli), chopped into 1/2-inch pieces
2 tablespoons unsalted butter, at room temperature
1 cup all purpose flour
2 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup sugar
2 eggs, at room temperature
1 teaspoon pure vanilla extract
1 cup chocolate morsels/chips (1/2 cup semi sweet chocolate morsels plus 1/2 cup white chocolate morsels) 

Place an oven rack in the center of the oven.... preheat the oven to 300 F / 170 C  

line 2 baking sheets with parchment paper

In a sauce pan, combine the chocolate and butter....



cook on lowest heat and stir occasionally until the chocolate has melted and the mixture is smooth


In a medium bowl, sift flour, cocoa powder, baking powder and salt...


whisk all dry sifted ingredients together


In another medium bowl, whisk eggs


add sugar and vanilla... blend well


gradually add the dry ingredients and stir until thick and smooth.


fold in the melted chocolate


stir in the chocolate chips/morsels


using a cookie scoop or tablespoon, scoop the batter onto the prepared baking sheets...


bake until slightly puffed and the tops begin to crack, 18 to 20 minutes


this crack look is sign of doness


allow the cookies to cool completely on wire rack and serve
