Vanilla Sponge Cake

This is plain Vanilla Sponge Cake... you can use it for any desert or for any cream cake or pastry base... you need:
eggs 3 (separated) 
all purpose flour 3 0z ( aprrox 3/4 cup)
sugar 3 oz ( approx 1/2 cup)
baking powder 1 tsp

grease two 8 inch pans... line with parchment paper... i prefer using parchment paper for sponges... it will help in taking out of the pan after baking 

separate yolks and whites

now beat whites very well until stiff peaks forms

add yolks and beat

add sugar and beat that with eggs untill well combine and you will get a fluffy mixture

fold sifted flour and baking powder in sugar and egg mixture

pour the batter  in prepared pans

and bake them for 25 - 30 minutes, or until a toothpick inserted in the center of the cake comes out clean

cool on wire rack... and remove the parchment paper

use for any cream cake or for deserts... your basic vanilla sponge is ready
