KFC Style Cripsy Fried Chicken
Crispy crust outside and juicy tender chicken inside, Yes! you got it right, here comes one from my kitchen as well.. I don't name it MFC (Mahwish Fried Chicken) or DFC (Desi Fried Chicken), i'll keep it as it is, (you know what I mean ;) )
you need:
Chicken pieces with skin (I used only drumstick everyone loves it)
Vinegar 1/4 cup
Salt 1 tsp
Red chili powder 1/2 tsp
or Red chili sauce 4 tbsp
All purpose flour 1 cup
Salt 1 tsp
Red chili powder 1/2 tsp
Baking powder 1 tsp
Mustard Powder 1/2 tsp
Oil for deep frying
Pull down little bit of skin down and poke with fork all over, and marinate it with vinegar, salt and red chili powder, instead you can use chili sauce and salt as well.
leave them covered in fridge for 6 -8 hours, preferably over night
put the marinated pieces over strainer to drain all water
then, season the flour with salt, red chili powder, baking powder and mustard powder. Stretch the skin back again on pieces and dretch them in seasoned flour and lay them straight in single layer
put them in fridge for around 15 - 20 minutes and dretch them in flour again. you can do this one more time, but I feel 2 times is enough too
now, deep fry them...
start on low-medium flame and cover for 5 minutes, turn and cover more and then fry on medium-high heat till they get good color
place chicken pieces in baking tray covered with foil and then place a grill on it, and keep them in oven on lowest temperature on your oven... It will help drain extra oil from your chicken, keep it crispy and if its little uncooked left it will be done in there, and stay warm till you serve
and Voila! Serve them with coleslaw, breads, biscuits, and/or with french fries and Enjoy!
