Cholay ki Kachori/Chick pea kachori with Raita


a diffrent item for Eid nashta or lovely snack for Iftar... recipe courtesy Maeda Rahat.... with few of my own addition... 

for dough:

all purpose flour 1 cup
clarified butter (ghee)/oil 3 tbsp
salt 3/4 tsp (to taste)
water for kneading 

for filling:
chick peas (cholay) 1 cup boiled 
cumin powder 1 tsp
coriander powder 1 tsp

yogurt dip (Raita) - for serving 
yogurt 1/2 cup
minced garlic 1/4 tsp
salt 1/2 tsp
red chili powder 1/4 tsp
cumin powder 1/2 tsp

first make dough... in mixing bowl add flour, salt, ghee and knead it with water 


leave it for at least 1 hr to rest 


make filling... first coarsely mash boiled chick peas... add cumin powder and coriander... add 3 -4 tbsp water... mix and cook till water dries


transfer in bowl... and cool completely


then, make small balls out of the dough


roll in round shape


put around a tablespoon of filling in middle


and start holding the edges in the middle... having falls downwards


gather all falls in the middle


 twist and turn


repeat the same process with remaining dough and filling


deep fry them in hot oil till golden from all sides


for yogurt dip: whip yogurt with garlic, salt, red chili powder and cumin powder


transfer in serving bowl.... and garnish with cumin powder


serve kachoris's with raita and enjoy :)

  1. i tried this. but it was uncooked from inside. and wasn't much crispy.
